Pandan Pancakes

Ingrédients

  • 2 tablespoons of Pandan Latte Lumi powder
  • 200g of flour
  • 2 tablespoons of sugar
  • 1 tablespoon of baking powder
  • 1 pinch of salt
  • 250ml of plant-based milk
  • 1 egg (or vegan substitute)
  • 2 tablespoons of vegetable oil

Préparation

    In a large bowl, mix the flour, ube powder, sugar, baking powder and salt.

    In another bowl, whisk together the plant-based milk, egg, and oil.

    Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms. Do not overmix.

    Heat a lightly oiled pan over medium heat.

    Pour approximately 60ml of batter for each pancake.

    Cook for 2-3 minutes on each side, until bubbles appear on the surface and the edges are golden brown.

    Serve warm with maple syrup, fresh fruit and a sprinkle of ube powder.

L’astuce du chef

For an even creamier latte, use an electric milk frother. You can also add a drop of vanilla extract to enhance the flavors.
