Pancakes au Pandan

Pandan is a tropical plant with long, thin leaves, prized in Southeast Asia for its subtle and delicate flavor. With our pandan powder, you can create soft and flavorful pancakes, tinted with a beautiful natural green color.

Ingredients

  • 250 g flour
  • 2 teaspoons Latte Lumi pandan powder
  • 2 teaspoons baking powder
  • 1 pinch of salt
  • 30 g sugar
  • 2 eggs
  • 250 ml milk
  • 50 ml neutral oil
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the dry ingredients: In a large bowl, mix the flour, pandan powder, baking powder, salt, and sugar. Whisk well so that the pandan powder is evenly distributed and the color is uniform.
  2. Prepare the wet ingredients: In another bowl, beat the eggs with the milk, oil, and vanilla extract until smooth.
  3. Combine the two preparations: Pour the wet ingredients into the bowl with the dry ingredients. Gently mix with a spatula until the batter is slightly lumpy. Do not overmix the batter to keep the pancakes fluffy.
  4. Cook: Heat a skillet or griddle over medium heat. Pour portions of batter and cook for about 2 to 3 minutes until bubbles form on the surface. Gently flip and continue cooking for 1 to 2 minutes until the underside is golden.
  5. Serve: Arrange your pandan pancakes on a plate and enjoy them warm with your favorite toppings: honey, fresh fruit, yogurt, or fresh cream.
