Ube Cookies & White Chocolate
Soft cookies combining ube and white chocolate.
Ingrédients
- 250g of flour
- 2 tablespoons of Ube Latte Lumi powder
- 1 teaspoon of baking powder
- 150g of softened butter
- 1 egg
- 1 teaspoon of vanilla extract
- 150g of white chocolate chips
Préparation

1Preheat your oven to 180°C (Gas Mark 6) and prepare a baking tray with baking paper.

2In a bowl, mix the flour, ube powder and baking powder.

3In another bowl, beat the softened butter with the sugar until you get a creamy mixture.

4Add the egg and vanilla extract, and beat again.

5Gradually incorporate the dry mixture into the wet mixture, then add the white chocolate chips.

6Form balls of dough and place them on the baking sheet, spacing them apart.

7Flatten each ball slightly with the palm of your hand.

8Bake for 12-15 minutes, until the edges are lightly golden.

9Let them cool for a few minutes on the baking sheet before transferring them to a wire rack.

For an even creamier latte, use an electric milk frother. You can also add a drop of vanilla extract to enhance the flavors.
