Ube Cookies & White Chocolate

Cookies Ube & Chocolat Blanc

These soft cookies combine the sweet, slightly vanilla flavor of ube with the richness of white chocolate. A gourmet and original combination that will delight your taste buds.

Ingredients

  • 225 g softened butter
  • 150 g white sugar
  • 100 g brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 280 g flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons ube Latte Lumi powder
  • 200 g white chocolate chips

Preparation

  1. Prepare the base: Preheat your oven to 180°C (350°F). In a large bowl, mix the softened butter with both sugars until light and creamy.
  2. Incorporate the eggs: Add the eggs one by one, mixing well after each addition. Pour in the vanilla extract and mix until smooth.
  3. Prepare the dry ingredients: In another bowl, sift the flour, baking powder, and salt. Stir in the ube powder and mix well to avoid lumps.
  4. Combine the mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until a homogeneous dough is formed.
  5. Add the white chocolate: Fold in the white chocolate chips gently.
  6. Shape the cookies: Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 5 cm (2 inches) apart.
  7. Bake: Bake for 12 to 15 minutes, until the edges are lightly golden but the center remains soft.
  8. Cooling: Let cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
